Our recipe was created to provide a shortbread cookie dough to pair with your Loki Doki Dog cookie cutters. Once baked, the cookies will retain the beautiful impressions made by our cookie cutters. You can decorate the cookies with icing and sprinkles if you want to jazz them up, but it's not necessary with our cookie cutter designs.

Ingredients
10 tbsp cold unsalted butter
3/4 C sugar
1 egg
1 tsp vanilla extract
½ tsp almond extract
2 1/4 C all-purpose flour (plus extra for dusting)
1/2 C cornstarch
1/4 tsp kosher salt
Directions
Combine cold butter & sugar until well combined in a stand mixer, then mix in egg and extracts.
In a separate bowl, combine the remaining dry ingredients. Blend dry ingredients with a whisk.
Slowly add dry ingredients to wet ingredients & mix well until you see the dough pull away from the sides of the bowl into a ball. Divide the dough. Cover one dough with plastic wrap and place the dough with wrap in the refrigerator. This will prevent the other dough from warming up while you are working on the first batch. Rotate them out as needed.
Take your unwrapped dough to a work surface where you’ll roll out and stamp dough with your Loki Doki Dog cookie cutters.
Dust your rolling pin and work surface lightly with flour. Roll out dough to 1/4” thickness and lightly dust dough with flour before stamping. If necessary, dip your Loki Doki Dog cutter in flour to lightly dust. Tap out extra flour from the cutter before stamping. Stamp out your cookies & set them on a parchment-lined baking sheet.
Before baking, set uncooked cookies in the refrigerator for 10 minutes.
Remove them from the refrigerator and bake at 375 for about 12-14 minutes. Note: Cookies will not be golden on top when fully cooked.
Cool them on a cooling rack before storing them in a sealed container.
